If you have some time on the weekend and fancy moving away from the standard toast or cereal routine, then why not try one of these more luxurious breakfast recipes.

  1. Oatmeal Buttermilk Blueberry Pancakes: I love this recipe from Martha Rose Shulman of the New York Times. Delicious, wholemeal flour and buttermilk pancakes, full of fresh or frozen blueberries and topped with a drizzle of honey.

  2. Baked Cottage Cheese French Toast: A really interesting, savoury French toast from Sophie of Mostly Eating. Served with a cumin and coriander flavoured zucchini and sweetcorn salsa. I cannot tell you how many times I've made this recipe. It's one of my favourites.

  3. Huevos Rancheros: In my opinion one of the best breakfasts around. I make this a lot, and also use Smitten Kitchen's egg cooked on tortilla method for countless other meals. A delicious and flexible meal.
