If you have some time on the weekend and fancy moving away from the standard toast or cereal routine, then why not try one of these more luxurious breakfast recipes.
- Oatmeal Buttermilk Blueberry Pancakes: I love this recipe from Martha Rose Shulman of the New York Times. Delicious, wholemeal flour and buttermilk pancakes, full of fresh or frozen blueberries and topped with a drizzle of honey.
- Baked Cottage Cheese French Toast: A really interesting, savoury French toast from Sophie of Mostly Eating. Served with a cumin and coriander flavoured zucchini and sweetcorn salsa. I cannot tell you how many times I've made this recipe. It's one of my favourites.
- Huevos Rancheros: In my opinion one of the best breakfasts around. I make this a lot, and also use Smitten Kitchen's egg cooked on tortilla method for countless other meals. A delicious and flexible meal.
