Ingredients for Christmas cookies

• 330 g plain flour
• 1 teaspoon baking soda
• ½ teaspoon baking powder
• 240g butter, softened
• 300 g caster (superfine) sugar
• 1 egg
• 1 teaspoon vanilla extract
 

Preparation for Christmas cookies

• Preheat oven to 375°F (190°C). In a small bowl, stir together the flour, baking soda, and baking powder. Set aside.
 
• In a large bowl, cream together the butter and sugar until smooth. Beat in the egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of the dough into balls, and place onto ungreased cookie sheets.
 
• Bake 8 to 10 minutes in preheated oven, or until golden. Let stand on cookie sheet for two minutes before removing to cool on wire racks.
 
Tip -  For a quick and easy Christmas gift, stack a dozen cookies on top of one another, wrap them in holiday cellophane, tie with a festive ribbon, and cross a few folks off the Christmas list!
