Ingredients1⁄4 cup medium grain white rice
400 g can coconut milk
zest of 1/2 lime
1 tablespoon honey
2 lemongrass stems cut into
10 lengths and bruised
2 star anise
4 kiwifruit peeled, halved and thinly sliced
1. Preheat the oven to 150°C.
2. Place rice, coconut milk, lime zest, honey, lemongrass and star anise in a ovenproof dish. Add 200ml water and place in the oven.
3. After 30min, give the mixture a good stir, replace in oven and continue cooking for another 30min, before stirring again. Cook for a final 30-45min without stirring.
4. Remove lemongrass and star anise. Spoon warm rice mixture into heatproof glasses and serve, topped with thin slices of fresh kiwifruit.
