Finally we're getting some hot days where I live. In the build up to Christmas it seemed summer was never going to come. But the weather is now glorious, which means my thoughts are turning to lighter meals and outdoor eating.

My Goat Cheese and Radish Bruschettas make lovely finger food for a summer dinner party. They're low fuss and taste fresh and tangy.

While they're also good finger food, my Indian Spiced Fish Kebabs can be used as a summer barbecue dinner. The recipe uses a few ingredients, mainly because of the spices, however it's still easy to make. To convert them into a meal I'd aim for two or three kebabs per person and serve these with wholemeal pita pockets, the yoghurt dipping sauce and a big pile of fresh salad.

Also, via @Ganga108 I have my eye on this Chilli, Kaffir Lime and Tamarind Tofu recipe.  Served on top of a big pile of stir fried greens I think it would make a delicious meal.

These Pumpkin Seed Cakes from Green Kitchen Stories make a light and yet sweet end to a summer meal. Top with the chocolate or lime mousse as per their suggestion, or spread over a little ricotta and sprinkle with fresh berries or slices of ripe summer peach.
