Goats' cheese and radish bruschetta recipe
These delicious and pretty toasts match tangy goats’ cheese with peppery radishes and fresh herbs

Makes 8
Ingredients for goats' cheese and radish bruschetta
1 baguette, cut into
1cm-thick slices
3-4 garlic cloves, peeled
2 tbsp olive oil
150g soft goats’ cheese
4 radishes, cut into quarters
¼ bunch chives, finely chopped
2 green shallots, finely sliced
Black pepper to season
Preparation for goats' cheese and radish bruschetta
1. Preheat the oven to 180°C. Take each 1cm slice of baguette and rub both sides with garlic, then brush with olive oil.
2. Place on a baking tray and toast in oven for 8-10 minutes, turning halfway through. Leave to cool.
3. Spread each piece of toasted baguette with a smear of goats’ cheese, then top with two pieces of radish and sprinkle with the fresh chives and shallots. Season with cracked black pepper.
TIP: The toasts can be prepared up to two days in advance. Leave them to cool and place in an airtight container in the fridge. Top with the goats’ cheese and herbs just before serving.
