Dried fruit

Dried fruits are a convenient base for a fruit salad when fruit options are limited. Drying does not affect the fibre content.

Ingredients

2 c rolled oats
1 c rice bran
2 c bran flakes
3⁄4 c unprocessed wheat bran
1 1⁄2 T sesame seeds (or try sunflower or pumpkin seeds)
2 T slivered almonds
3⁄4 c shredded or flaked coconut
2 T honey
150 ml fresh orange juice
1⁄2 c apricots, chopped finely
1⁄2 c banana chips
1⁄2 c sultanas
6 prunes, chopped finely

Preparation

1 Combine all dry ingredients (except dried fruit). Warm honey and juice briefly in the microwave, then pour over dry ingredients. Mix well.

2 Place mixture onto a baking tray lined with baking paper, bake at 150°C for 25-30 minutes or until almonds are toasted. Allow to cool completely.

3 Combine dried fruit with toasted ingredients. Store in an airtight container.

Tip: Other dried fruits can be used instead – try apple, cranberries, figs, pears or paw paw.
