How to Make Mayonnaise in a Blender

Put the 2 egg yolks (or 1 whole egg) in a blender,
then add the mustard, vinegar or lemon juice and
blend for a few seconds. With the motor running,
start
pouring in the oil through the hole in the lid,
drop by drop
at first, and then in a thin stream
until the mixture appears to be thick. This method
will produce a slightly thinner and lighter result
than hand-mixed mayonnaise.

Adding flavours

There are various ways to spice up a basic mayonnaise, either bought or homemade.

  • Add finely chopped garlic or herbs – basil, chives, dill, parsley, tarragon and thyme are all good on their own or as a mixture.
  • Try using a tablespoon each of dijon mustard and honey.
  • Make a paste of sun-dried tomatoes and garlic in a blender and stir it into the finished mayonnaise.
  • Fold a little harissa (a hot Middle Eastern/North African chilli paste) into mayonnaise. Add it gradually until it reaches an intensity you like.
