Roasted Sweet Potato with Oranges and Chorizo

Roasted Sweet Potato Ingredients
Serves 4
What used to be meat with a side of veg is now veg with a side of meat – much better for you, but just as delicious.
- 4 orange-fleshed sweet potatoes (kumera)
- 2 tbsp olive oil
- Sea salt and pepper
- 1 orange
- 2 fresh chorizo sausages, sliced
- 150 g baby spinach leaves
- 2 tbsp orange juice
- Sea salt and cracked black pepper
How to Cook the Roasted Sweet Potato
1. Heat the oven to 200C.
2. Scrub the sweet potatoes and cut in half lengthwise.
3. Brush with olive oil and season well.
4. Place cut-side down in an oven tray lined with baking paper and bake for 30 minutes.
5. Add the chorizo sausages and orange quarters and bake for a further 15 minutes.
6. Brush the sweet potatoes with the chorizo juices.
7. Pile everything on a serving platter, scatter with spinach, sea salt and pepper and squeeze the orange quarters over the top.
