Strawberries
Once regarded as an aphrodisiac in France, strawberries are still our best-loved summer fruit. They contain the phytochemical compound ellagic acid, which is important in preventing cancer. They are even thought to help fight heart disease.
What’s in them
Very high antioxidant capacity, fibre, manganese, vitamin C (more than any other berry), potassium, folic acid, ellagic acid.
Choosing the best
Avoid berries that have white or green colouration. Their stems and calyces (green crowns) should be intact. Watch out for mould or leaking juice in the bottom of the punnet – always turn it upside down to check.
How to store
Strawberries don’t ripen after they’re picked – they just soften. It’s best to use them as soon as possible. Fruit for use in jam or cooking can be frozen.
Did you know?
Adding a few drops of rose water to strawberries will enhance their flavour.
Smart tip
Avoid washing strawberries unless they’re very dirty. If you have to wash them, don’t remove the stems and calyces first, otherwise the fruit will absorb water.
You could try…
smoked salmon with ripe strawberries and freshly ground pepper. Or team strawberries with rhubarb to make pies, crumbles, jams or preserves.
