Seafood paellaNo trip to Spain would be complete without sampling their famous rice dish, paella. The ingredients vary from region to region, but we've used fish, squid and mussels for this version. Serve with crusty bread.
Seafood and bacon paellaTraditional paella is made in a large, wide pan, and the rice is not stirred while it cooks. For this quick, frying-pan version, you will need to stir the mixture occasionally. Try cooking it on the barbecue to give it a lovely smoky flavour.
Chicken paellaThe Spanish are proud of their saffron-hued paella, and rightly so. Our low-fat version stars chicken and prawns, but you could also add other seafood or some sauteed sliced chorizo sausages to the mix. Paella takes its name from the wide, shallow two-handled pan in which it is traditionally cooked and served.
Fish soupMixed seafood combined with white fish, simmered with chunks of potato, tomatoes and some handy frozen vegetables, make a main course soup that is bursting with flavour and goodness. It is delicious served with bread.
Chicken and chorizo paellaA little spicy chorizo goes a long way and adds a fabulous flavour to this colourful dish. Brown rice has a wonderful nutty texture and it is more nutritious than white rice.
Vegetarian paellaA wonderfully rich and satisfying dish, this vegetarian version of a classic is a great way to introduce your family to tofu, which is a good source of low-fat protein, vitamins and minerals. Serve hot with a tomato salad.
Paella with chicken and prawnsArborio rice is a creamy textured, medium-grain Italian rice used in making paella and risotto because it remains firm in the centre.
Smoked fish paellaOne of the reasons the so-called Mediterranean diet is considered healthy is that it features many dishes like this one from Spain, based on rice cooked in olive oil with lots of vegetables and a modest amount of protein foods. The spicy chorizo here adds an authentic Spanish flavour.
