Sweet & Sour Tofu with Vegetables
This delicious vegetarian dish is packed full of goodness
Serves 4
Ingredients for sweet & sour tofu with vegetables
2tbsp soy sauce
2tbsp fresh lime juice
60ml hot water
2 tsp sugar
4 spring onions, thinly sliced
225g cabbage, coarsely chopped
1 zucchini, halved lengthways and cut across into 1/2 cm slices
1 red capsicum, cored, seeded and diced
1 440g tin pineapple pieces
350g tofu, cut into 2cm squares
1 tbspn finely chopped fresh ginger
1/4 tspn salt
1/8 tspn cayenne pepper
Preparation method for sweet & sour tofu with vegetables
1. Combine soy sauce, lime juice, hot water and sugar in a large saucepan. Bring to the boil over medium-high heat. Add spring onions, cabbage, zucchini and capsicum. Reduce heat and simmer, covered for 4 minutes.
2. Add pineapple, tofu, ginger, salt and cayenne pepper. Cover and simmer, stirring occasionally, until heated through, about 3 minutes. Serve with cooked rice and orange wedges to garnish.
